AMARANTH ISRAELI SALAD

What in fact is amaranth? There are many articles and opinions on the Internet that say that a human needs to get used to this product, its taste and smell that normally seems quite unusual. However, we are here to calm you down: even if the flavor may seem strange at first, when you cook amaranth, it will disappear. By the way, the amaranth contains absolutely no gluten, but includes many vitamins B and protein. In ancient China this product was called the “food of immortality” because of the impressive number of useful properties that it gives to your body. Below we are presenting a useful recipe of a delicious and healthy salad!

Cooking time: 30 min.

(vegan, gluten free, rich in fiber and omega-3)

For 4 servings you will need:

½ Cup amaranth (soaked for 40 min in water)

½ Cup quinoa (soaked for 30 minutes in water)

100 grams of cherry tomatoes

1 ripe avocado

30 grams of pumpkin seeds

1 lemon

½ Tsp of black pepper

2 tbsp of B-TEA raw and organic green tea Kombucha vinegar

1 tsp of pink Himalayan salt

How to make a salad

  1. Boil amaranth for 15 min, and quinoa for 10 mins.
  2. Cut the tomatoes into quarters, cut coriander leaves, peel the avocado and cut into cubes.
  3. To make the sauce: mix the juice of 1 lemon, tahini, black pepper, salt and add Kombucha vinegar.
  4. Mix amaranth, quinoa and vegetables, top with sauce and sprinkle the top with pumpkin seeds.
